Legend (maybe
an
urban one) tells
us that when the Aji Limon pepper was first
imported to the US it came as Aji-Lima or "pepper from
Lima", Peru. Because of its beautiful yellow color and lemony taste
overtones, Aji Limon (lemon pepper) sounded more appropriate
(marketable) and the
name stuck.
Our
Aji Limon is
considered mild to medium by hot pepper lovers. Typically, the Scoville
rating runs between 30,000 to 50,000, comparable to Tabasco or Cayenne
peppers. This pepper is unique and complements so many foods we had to
include
it
in spite of its modest heat range.
Aji Limon was
cultivated
by the Inca at least at least 3,000 years ago and is still a favorite
in Peru and Bolivia for making ceviche, a delicious marinated fish.
The Aji Limon
is
a cultivar in the species Capsicum baccatum. Our
Aji Limon is organically grown, sun dried, crushed and double sealed in
40 gram packs. This is a must have pepper for your collection and
